BROCCOLI  LENTIL  PEAS SOUP

This soup is High protein , low calorie curated for post bariatric patients so that other than supplements they can meet their RDA for protein. This Nutritious well balanced soup counts as a meal if you enjoy a generous portion.

Nutritional Info :

Lentils are high protein foods along with broccoli and peas. Also lentils ar rich in fibre , iron and folate as well. Hence,this well balanced and nutritious soup packs well for lunch/dinner as a meal.

 

Ingredients :

  • 10 to 12 Brocolli florets, cut and washed (optional, as per market availability)
  • ½ cup lentils (brown or green ) washed and rinsed
  • ¼ cup Peas (washed)
  • 1 carrot , peeled and chopped
  • 1 medium white onion, chopped
  • 1 medium tomato, chopped
  • Freshly grounded black pepper ( a pinch or 2 )
  • 1 tbsp olive oil
  • Curry leave /thyme (for flavor/optional)
  • Salt , to taste

 

Method of preparation:

  • Pressure cook the lentils for 4 whistle in the cooker.
  • Meanwhile, add olive oil to the pan and stir fry onions, tomatoes and carrots until halfly cooked.
  • Add curry leaves, thyme to the above vegetable mixture.
  • For the creamy consistency , blend half the lentils in a blender and pour the other half in the vegetable mixture.
  • Then pour the blended lentils in the vegetable mixture and add water as per the required consistency.
  • Simmer and cook the entire contents for 10 mins, also for the flavor to blend in.
  • Add pepper and salt to taste.
  • Serve hot and enjoy the creamy lentil soup.

Note:

For clear soup , mash and strain the lentils and the vegetable broth and mix both the mixture.
